It can be pronounced as "bun sale." It was made of some mung bean flour stuffed with shrimp, onions, green onions, lean pork, and mung beans.  Mung beans are a type of legume, which are high in protein and fiber.&lt;br /&gt;&lt;img src="http://photos1.blogger.com/img/115/5495/320/banhxeo.jpg" width=270 height=200 align="right" alt="This is 'banh xeo.'"&gt;&lt;br /&gt;&lt;br /&gt;That was what I had for lunch last Sunday.  Boy was it tasty and delicious.&lt;br /&gt;&lt;br /&gt;Since "banh xeo" is traditionally eaten with lettuce and herbs, it can be considered as a healthy meal.  There are a variety of herbs I ate.  They tasted great; however, I only recognized one type:  mint leaves.  &lt;br /&gt;&lt;br /&gt;Mint leaves are known to assist with digestion and heartburn.  Some studies also say that mint leaves can also help in relieving stress and anxiety that is usually responsible for our fast aging.  If anyone knows of the benenfits of eating herbs, please inform us.&lt;br /&gt;&lt;img src="http://photos1.blogger.com/img/115/5495/320/lettuce-n-nuoc-mam.jpg" width=270 height=200 align="right" alt="This is the lettuce dish and 'nuoc mam' sauce."&gt;&lt;br /&gt;&lt;br /&gt;I had 4 "banh xeo" with a full plate of lettuce and herbs.  I ate it with some Vietnamese sauce called "nuoc mam" which is low calorie.&lt;br /&gt;&lt;br /&gt;The picture of "banh xeo" is included here. It has alot of vitamins and minerals, especially calcium and iron.  &lt;a href="http://www.fight-aging.com"&gt; &lt;img src="http://fight-aging.com/images/spinach_savoy.jpg" align="right"&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Calcium and iron are anti aging stars in helping us guard against cancer and fight aging. If you depend on spinach to provide you calcium and iron, be warned.&lt;br /&gt;&lt;br /&gt;Spinach contains a chemical called oxalic acid.  Oxalic acid binds with iron and calcium and thus reduces the absorption of these minerals.&lt;br /&gt;&lt;br /&gt;However, there's a way to get around it. Eat spinach with vitamin C foods such as tomatoes or any citrus fruit. Vitamin C helps your body absorp the minerals more efficiently.&lt;br /&gt;&lt;br /&gt;With that said, spinach is a great source of vitamin A which is beneficial to your vision.  Vitamin A in spinach also assists in slowing down the onset of wrinkly skin and helps you fight aging.  Just 1-2 cups of spinach every other day provides the nutrients necessary to a healthy immune system. I have lost about 53 lbs in the last 2 years while still eating desserts like donuts and cheesecake.  No I don't eat large portions of it, but I also don't eat it just once in a blue moon either.  I enjoy a little of it almost every day.  I know these so-called "junk foods" don't have much nutrition and won't earn any anti aging stars.  However, just eating a small portion each day helps me stick to my healthy eating plan.  &lt;br /&gt;&lt;br /&gt;I eat 2 nutritious meals a day, plus 1 small dessert like a donut, and 2 servings of fresh fruit.  I find it very easy to stick with the program.  I don't feel cravings for anything and I exercise just 20 minutes a day.  &lt;br /&gt;&lt;br /&gt;Give it a try.
